Zuppardo's had softshells yesterday, so I picked up a few. I breaded them lightly with a mix of flour, Italian-style breadcrumbs, and creole seasoning. Then they were pan-fried and served with Rigatoni Alfredo (homemade) and asparagus. Yum!
